Corn And Bacon Chowder

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 slices bacon, chopped
  • 2 onions, chopped
  • 1 garlic clove, minced
  • 2 potatoes
  • 3 cups chicken broth
  • 2 cups corn kernels
  • 2 cups broccoli florets
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup cheddar cheese, shredded

Recipe

  • 1 in a saucepan, cook the bacon over medium heat until crisp, about 5 minutes.
  • 2 drain the fat from the pan.
  • 3 add the onions and garlic and cook, stirring occasionally, until softened, about 5 minutes.
  • 4 meanwhile, peel and cube the potatoes.
  • 5 add to the pan along with half of the chicken broth and bring to a boil.
  • 6 reduce the heat to medium-low, cover and simmer until the potatoes are tender, about 10 minutes.
  • 7 using a potato masher or hand blender, mash several times to break up about half of the potatoes.
  • 8 add the remaining broth, corn and broccoli.
  • 9 simmer until the broccoli is tender, about 6 minutes.
  • 10 reduce the heat to low.
  • 11 stir in the milk, salt and pepper.
  • 12 heat through but do not boil.
  • 13 sprinkle each serving with cheese.
