Corn And Bacon Chowder

Ingredients

- 3 slices bacon, chopped
- 2 onions, chopped
- 1 garlic clove, minced
- 2 potatoes
- 3 cups chicken broth
- 2 cups corn kernels
- 2 cups broccoli florets
- 1 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup cheddar cheese, shredded
Recipe
- 1 in a saucepan, cook the bacon over medium heat until crisp, about 5 minutes.
- 2 drain the fat from the pan.
- 3 add the onions and garlic and cook, stirring occasionally, until softened, about 5 minutes.
- 4 meanwhile, peel and cube the potatoes.
- 5 add to the pan along with half of the chicken broth and bring to a boil.
- 6 reduce the heat to medium-low, cover and simmer until the potatoes are tender, about 10 minutes.
- 7 using a potato masher or hand blender, mash several times to break up about half of the potatoes.
- 8 add the remaining broth, corn and broccoli.
- 9 simmer until the broccoli is tender, about 6 minutes.
- 10 reduce the heat to low.
- 11 stir in the milk, salt and pepper.
- 12 heat through but do not boil.
- 13 sprinkle each serving with cheese.
