Creamy Broccoli Chowder

Ingredients

- 1 (5 ounce) package au gratin potato mix
- 2 cups milk
- 1/2 cup canned whole kernel corn or 1/2 cup frozen whole kernel corn, thawed
- 1/4 cup chopped celery
- 2 (14 1/2 ounce) cans low-sodium low-fat chicken broth
- 1 (9 ounce) package frozen chopped broccoli
- 1 1/2 cups shredded swiss cheese
- salt and pepper, to taste
Recipe
- 1 combine potatoes, sauce mix and remaining ingredients except cheese in a large saucepan or dutch oven and heat to a boiling over high heat, stirring occasionally and breaking up broccoli with fork.
- 2 reduce heat, cover and simmer 15 to 20 minutes, stirring occasionally, until potatoes are tender. season with salt and pepper to taste if desired.
- 3 stir in cheese. cover and simmer about 5 minutes, stirring occasionally, just until cheese is melted.
