Chicken With Oregano And Lemon

Ingredients

- 4 boneless chicken breasts
- 2 teaspoons dried oregano
- salt
- ground black pepper
- 2 tablespoons olive oil
- 1 1/2 lbs potatoes, cut into 1/4-inch thick slices
- 1 bunch green onion, coarsely chopped
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 2 sprigs fresh oregano, chopped
Recipe
- 1 season the chicken with the dried oregano, salt and pepper.
- 2 heat the oil in a large frying pan.
- 3 add the chicken, potatoes and green onions, and brown quickly for 2 to 3 minutes.
- 4 pour in the broth, cover, and simmer for 10 to 15 minutes, or until the chicken is cooked.
- 5 add the lemon juice and fresh oregano.
- 6 cook for another 3 minutes.
- 7 serve immediately.
