Chicken With Oregano And Lemon

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 boneless chicken breasts
  • 2 teaspoons dried oregano
  • salt
  • ground black pepper
  • 2 tablespoons olive oil
  • 1 1/2 lbs potatoes, cut into 1/4-inch thick slices
  • 1 bunch green onion, coarsely chopped
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 sprigs fresh oregano, chopped

Recipe

  • 1 season the chicken with the dried oregano, salt and pepper.
  • 2 heat the oil in a large frying pan.
  • 3 add the chicken, potatoes and green onions, and brown quickly for 2 to 3 minutes.
  • 4 pour in the broth, cover, and simmer for 10 to 15 minutes, or until the chicken is cooked.
  • 5 add the lemon juice and fresh oregano.
  • 6 cook for another 3 minutes.
  • 7 serve immediately.
