Comforting Chicken

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 medium onion, thinly sliced and separated into rings
  • 1/2 cup butter
  • 3 -4 lbs chicken, cut up
  • 4 medium potatoes, peeled and quartered widthwise
  • 4 carrots, peeled and cut into chunks
  • 1 cup whipping cream
  • 1 tablespoon minced fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large skillet or dutch oven, saute onion in butter until tender.
  • 2 remove with a slotted spoon and set aside.
  • 3 in same pan, brown chicken pieces on all sides.
  • 4 return onion to pan, add potatoes and carrots.
  • 5 cover and cook over medium low heat for 30 minutes or until the vegetables are tender.
  • 6 stir in cream, parsley, salt and pepper.
  • 7 reduce heat and simmer, uncovered for 15 minutes or until slightly thickened.
