Colourful Potato Pie

Ingredients

- 4 slices bacon, chopped
- 2 onions, finely chopped
- 1/2 green pepper, finely chopped
- 1 stalk celery, finely chopped
- 3 potatoes, peeled and coarsely chopped
- 2 tomatoes, coarsely chopped
- 1 cup shredded cheddar cheese
- 2 eggs, separated
- 1 tablespoon milk
- 1/4 teaspoon salt and pepper
Recipe
- 1 in skillet cook bacon until crisp.
- 2 remove and drain.
- 3 add onion green pepper and celery to skillet.
- 4 cook over medium high heat 5 minutes; drain fat.
- 5 partially cook potatoes in boiling water 10 minutes; drain.
- 6 in lightly greased 8 inch square dish layer half the potatoes tomatoes bacon and onion mix and cheese.
- 7 repeat.
- 8 whisk together yolks and milk.
- 9 beat egg whites and salt and pepper until foamy.
- 10 fold egg whites into egg yolk mixture.
- 11 pour over vegetables.
- 12 bake at 350°f for 40 minutes.
