Colourful Potato Pie

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 slices bacon, chopped
  • 2 onions, finely chopped
  • 1/2 green pepper, finely chopped
  • 1 stalk celery, finely chopped
  • 3 potatoes, peeled and coarsely chopped
  • 2 tomatoes, coarsely chopped
  • 1 cup shredded cheddar cheese
  • 2 eggs, separated
  • 1 tablespoon milk
  • 1/4 teaspoon salt and pepper

Recipe

  • 1 in skillet cook bacon until crisp.
  • 2 remove and drain.
  • 3 add onion green pepper and celery to skillet.
  • 4 cook over medium high heat 5 minutes; drain fat.
  • 5 partially cook potatoes in boiling water 10 minutes; drain.
  • 6 in lightly greased 8 inch square dish layer half the potatoes tomatoes bacon and onion mix and cheese.
  • 7 repeat.
  • 8 whisk together yolks and milk.
  • 9 beat egg whites and salt and pepper until foamy.
  • 10 fold egg whites into egg yolk mixture.
  • 11 pour over vegetables.
  • 12 bake at 350°f for 40 minutes.
