Cheesy Potato Kugel

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 cup chopped onion
  • 2 tablespoons butter or 2 tablespoons margarine
  • 4 cups cooked peeled potatoes, shredded or diced
  • 2 cups shredded cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 eggs
  • 3/4 cup half-and-half

Recipe

  • 1 in a large frying pan, saute onion in butter until tender.
  • 2 do not brown.
  • 3 remove from heat and add potatoes.
  • 4 toss cheese with flour, salt and pepper.
  • 5 add cheese mix to potatoes.
  • 6 in a small bowl, combine eggs and cream.
  • 7 stir into potato mixture.
  • 8 spoon into a greased 9 inch pan.
  • 9 bake, uncovered for 20-30 minutes or until golden brown.
  • 10 cool for a minute after removing from oven and serve.
