Chicken Stew

Ingredients

- 5 lbs chicken
- 3 (28 ounce) cans diced tomatoes
- 1 (8 ounce) can tomato paste
- 16 ounces frozen cut okra (not breaded)
- 3 (15 1/4 ounce) cans corn
- 3 large onions
- salt and pepper
- 3 lbs potatoes
- 1/2 cup margarine
Recipe
- 1 cook chicken in 3 quarts of water until tender and de-bone the chicken, return it to the broth.
- 2 add everything except the potatoes and margarine, simmer for 2 hours. peel, dice, cook and mash the potatoes and add the margarine to them. set aside.
- 3 after the 2 hours of simmering, stir in the mashed potatoes and add a little water if needed.
- 4 cook 15 minutes longer, stirring frequently.
- 5 serve.
