Creamy Cabbage And Bacon Soup

Ingredients

  • Servings: 4
  • 4 slices bacon, chopped
  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 leek, sliced
  • 6 cups chopped savoy cabbage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups chicken stock
  • 2 cups diced peeled potatoes
  • 1 cup whipping cream

Recipe

  • 1 in a large pot, cook bacon until it renders its fat, about 5 minutes. add butter, onion and leek; sauté until softened, about 6 minutes.
  • 2 add cabbage, salt and pepper; cover and cook, stirring until cabbage is tender, about 10 minutes.
  • 3 add stock and potatoes and bring to a boil. reduce heat and simmer until potatoes are tender, about 20 minutes.
  • 4 add cream and simmer, stirring until soup achieves a creamy texture. process with stick blender or food processor, leaving some chunks.
