Cream Of Watercress Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 medium onion, diced
  • 1 small potato, diced
  • 25 g butter
  • 85 g watercress, rinsed
  • 300 ml milk
  • 300 ml vegetable stock
  • 4 tablespoons double cream (heavy)

Recipe

  • 1 melt butter and sauté onion until transparent.
  • 2 add potato, watercress, milk and stock.
  • 3 bring to boil, cover and simmer for 20 minutes
  • 4 blend in a processor.
  • 5 add cream and seasoning. heat if needed.
