Bubbe Leyah's Roasted Vegetables

Ingredients

  • Servings: 6
  • 3 large beets, peeled and cut into chunks
  • 2 large sweet potatoes, cut into chunks
  • 3 medium red potatoes, cut into chunks
  • 1 lb asparagus, cut into 1-inch pieces
  • 1 medium yellow onion, sliced
  • 5 garlic cloves, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon salt

Recipe

  • 1 preheat oven to 400°f line a 9x13 pan with parchment paper.
  • 2 toss beets with 1 t of olive oil. spread evenly into pan, and cook for 15 minutes.
  • 3 while the beets are cooking, combine sweet potatoes, red potatoes, asparagus, onion and garlic cloves together in a large bowl.
  • 4 in a small bowl, whisk together remaining olive oil, garlic powder and salt. add to the bowl of vegetables and toss well.
  • 5 when the beets have cooked for the 15 minutes, add the veggie mixture to the pan and stir together.
  • 6 cook another 40-50 minutes, stirring half-way through.
