Chocolate Potato Cake

Ingredients

• 1 cup mashed potatoes
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 tablespoon baking powder
• 8 tablespoons butter or 8 tablespoons margarine, softened
• 4 ounces unsweetened chocolate squares, melted (4-1oz squares)
• 2 cups sugar
• 4 eggs
• 3/4 cup buttermilk
• 1 teaspoon vanilla
• 1 teaspoon salt

Recipe

• 1 place all ingredients, except the chocolate, in a large bowl. with an electric mixer on low speed, mix until well blended, occasionally scraping the bowl with a spatula. then beat at medium speed for 4 minutes. add chocolate and blend throughly.
• 2 butter a 9x13-inch baking pan. pour batter into pan. bake in a preheated 350 oven for 45 minutes, or until a toothpick pushed into the centre comes out clean.
• 3 or bake in three 9-inch layer pans for 20 minutes, or until thoothpick comes out clean.
• 4 let stand for 10 minutes; remove from pans and cool on a wire rack. ice as desired.
