spicy sausage sweet potato bake

Ingredients

  • Servings: 8
  • 2 teaspoons olive oil
  • 3 white sweet potatoes, peeled and cut into wedges
  • 2 sweet onions, peeled and quartered
  • 2 (16 ounce) packages hillshire farm® smoked sausage or polska kielbasa, cut into bite-size pieces
  • 1 (10 ounce) jar pickled banana peppers, drained
  • 4 tablespoons chimichurri sauce (optional)
  • 1 teaspoon seasoning
  • 4 tablespoons butter

    Preparation Time: 5 mins Cook Time: 25 mins Ready Time: 30 mins

  • preheat oven to 425 degrees f (220 degrees c). lightly oil a 9x13 glass baking dish.
  • arrange sweet potatoes, onions, sausage in baking dish. pour entire jar of pickled peppers over ingredients. sprinkle with seasoning, drizzle with chimichurri, and top with pats of butter. cover dish tightly with foil.
  • bake for 15 minutes. remove foil and bake until vegetables begin to brown, about 10 more minutes.
