Ingredients

- 1 (20 ounce) package simply potatoes® shredded hash browns
- 4 eggs
- 1 onion, finely chopped
- 1 lb bacon, fried and crumbled
- 2 cups diced fried mushrooms
- 1 1/2 cups shredded cheese, of your choice
Recipe
- 1 fry bacon. drain. crumble when cooled.
- 2 fry onion and mushroom until onion is translucent.
- 3 shred cheese.
- 4 add all ingredients except cheese into a skillet and cook until potatoes are done. top with shredded cheese and serve with toast!
