Cabbage Soup /stew- No Not The Diet One!

Ingredients

- 1 1/2 lbs extra lean ground turkey
- 1 medium onion, chopped finely
- 28 ounces tomatoes (diced)
- 2 cups water
- 3 (10 ounce) cans beef consomme (preferably low sodium)
- 1 (10 ounce) can tomato soup (preferably low sodium)
- 4 carrots, chopped
- 3 celery ribs, chopped
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon pepper
- 3 cups cabbage, coarsely cut
- 1 potato, diced
Recipe
- 1 cook turkey, and onion drain any fat.
- 2 simmer all liquids and spices for an hour.
- 3 add ground turkey and remaining ingredients.
- 4 cook for another hour or until the vegetables are to your liking.
- 5 this is even better the second day!
