Cabbage Soup /stew- No Not The Diet One!

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 10
  • 1 1/2 lbs extra lean ground turkey
  • 1 medium onion, chopped finely
  • 28 ounces tomatoes (diced)
  • 2 cups water
  • 3 (10 ounce) cans beef consomme (preferably low sodium)
  • 1 (10 ounce) can tomato soup (preferably low sodium)
  • 4 carrots, chopped
  • 3 celery ribs, chopped
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon pepper
  • 3 cups cabbage, coarsely cut
  • 1 potato, diced

Recipe

  • 1 cook turkey, and onion drain any fat.
  • 2 simmer all liquids and spices for an hour.
  • 3 add ground turkey and remaining ingredients.
  • 4 cook for another hour or until the vegetables are to your liking.
  • 5 this is even better the second day!
