Christmas Roast

Total Time: 2 hrs 50 mins Preparation Time: 20 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 8
  • 4 -6 lbs roast (boneless)
  • 1 head garlic
  • sage
  • thyme
  • rosemary
  • oregano
  • sea salt
  • black pepper (for the rub)
  • 1 large onion
  • 6 medium potatoes
  • 1 (16 ounce) bag baby carrots
  • 1 cup red wine
  • 2 cups balsamic vinegar

Recipe

  • 1 place an oven bag inside of a dutch oven.
  • 2 place roast in bag.
  • 3 rub minced garlic on all sides.
  • 4 rub sage, thyme, rosemary, a little oregano, sea salt and fresh ground black pepper all over the roast to your taste.
  • 5 chop veggies and add to bag.
  • 6 pour in wine and balsamic vinegar.
  • 7 tie off bag.
  • 8 put in oven on 350°f for 2 1/2 hours or until browned and done.
