Creamed Mint Peas And Potatoes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 medium potatoes, peeled,diced
  • 1 teaspoon salt
  • 1 (10 ounce) package frozen green peas
  • 2 cups milk
  • 1 tablespoon flour
  • 1 tablespoon water
  • 1 teaspoon dried mint or 1 tablespoon fresh mint leaves, chopped
  • salt and pepper

Recipe

  • 1 place potatoes in medium saucepan.
  • 2 add cold water to barely cover potatoes; add one teaspoon salt.
  • 3 bring to boil over moderate heat; cook ten to fifteen minutes or until tender; drain.
  • 4 meanwhile, separately cook peas according to package directions.
  • 5 drain the peas, stir in the mint; keep warm until needed.
  • 6 add milk and butter to potatoes; heat until bubbling.
  • 7 combine flour and 1 tablespoon water; mix well.
  • 8 add to potatoes; cook, stirring, until thickened.
  • 9 add peas; mix well.
  • 10 season with salt and pepper to taste.
