Cheesy Scalloped Potatoes

Ingredients

  • Servings: 4
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 1/2 cups whole milk
  • 6 ounces cream cheese with herbs
  • 1 cup swiss cheese, grated
  • 1 cup cheddar cheese, grated
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch nutmeg
  • 5 medium baking potatoes
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 melt butter in a medium saucepan; whisk in flour.
  • 2 cook 2 or 3 minutes without browning, stirring constantly.
  • 3 whisk in milk.
  • 4 bring to a boil.
  • 5 reduce heat, simmer gently for 5 minutes.
  • 6 add herbed cheese, swiss, cheddar, garlic, salt, pepper and nutmeg.
  • 7 stir until cheese melts.
  • 8 peel and slice potatoes into 1/4 inch slices.
  • 9 layer potatoes and sauce alternately in a buttered 9 inch casserole dish, ending with the sauce.
  • 10 sprinkle with parmesan.
  • 11 bake in preheated 350°f oven for 1 1/2 hours.
  • 12 let stand for 5 to 10 minutes before serving.
