- 1 cook off chicken, garlic, onion and spring- onion in butter and oil until chicken not quite cooked through.
- 2 spoon mixture into seperate bowl, keeping liquid in pan.
- 3 add second measure of butter to juice and melt together. to this add mustard, cayenne and cornflour, cook for 1 minute.
- 4 stirring all the time, slowly add wine then cream. stir until thickened.
- 5 add chicken mixture and mushrooms to sauce and simmer lightly, stirring occasionally, for approx 20mins.
- 6 serve with new potatoes and stirfry veges.

- 1 small whole onion
- 1 carrot
- 3 bay leaves
- 1 tablespoon peppercorn

- 1 tablespoon all-purpose flour
- 6 tablespoons freshly grated horseradish
- 3/4 cup heavy cream

- 1 put the chicken in a large casserole with the onion, carrot, bay leaves, peppercorns, and salt. add water to cover , bring to a boil and simmer for 1 hour, or until the meat is . take the chicken from broth _ let cool. strain the broth reserve 2 1/2 cups for the sauce.
- 2 make the sauce. melt the butter in a large pan. add the sliced artichokes and fennel and cook for 2 minutes. sprinkle the flour over the vegetables and stir until the flour and butter have combined. pour in half the reserved chicken broth and stir until smooth. add the remaining chicken broth and the horseradish and bring to a boil. add the cream and salt and pepper and return the sauce to a boil, then decrease the heat to a simmer.
- 3 remove the skin and bones from the chicken. break the meat into medium-size pieces. stir the chicken and chervil into the sauce and let it simmer for a couple of minutes, or until the chicken is heated through. season with salt and pepper and serve with boiled potatoes.

- 1/4 cup chopped green onion
- 1/4 cup of very finely chopped celery

- 1 preheat oven 350 degrees.
- 2 dust steak chunks in flour that has been seasoned with salt and pepper or montreal steak seasoning.
- 3 brown steak chunks in oil in a skillet.
- 4 place steaks pieces in a 9 x 13 pan that has been sprayed with pam.
- 5 in a small pot, bring soup, broth and mushrooms to a boil. mix well and pour over steak -- cover with foil and bake 2 hours or until steak is tender. serve over mashed potatoes or buttered noodles.

- 1 peel and finely grate the potatoes.
- 2 plunge directly into cold water and soak briefly.
- 3 drain and squeeze as dry as possible by hand, using a colander, to remove the starchy liquid. this will help keep the latkes crispy.
- 4 beat eggs lightly with salt, add to potatoes, stir well.
- 5 barely cover the bottom of a frying pan with oil, and heat.
- 6 drop serving-spoonfuls (or up to 1/4 cup at a time) into the hot oil, and flatten slightly.
- 7 lower heat to cook evenly.
- 8 brown one side, then turn and brown the other. be careful not to overcook.
- 9 remove from oil with a slotted spoon, drain on paper towels.
- 10 serve piping hot with applesauce and sour cream on the side.
- 11 variations:.
- 12 add finely chopped onion, black pepper, and chopped parsley to the mixture before cooking, all to taste.
- 13 add 4t potato flour to make the patties firmer, more compact, and easier to handle, but the eating experience won't be quite as nice.
- 14 add a little hot pepper to taste.
- 15 sprinkle a bit of powdered sugar on top and skip the applesauce and sour cream. if you use the potato flour to bind them, they can be eaten by hand almost like doughnuts, once they are cool enough, of course!
