Corn Chowder With Chicken

Total Time: 4 hrs 30 mins Preparation Time: 30 mins Cook Time: 4 hrs

Ingredients

  • Servings: 6
  • 1 lb lamb belly, diced
  • 2 lbs chicken breasts, cubed
  • 2 cups yellow onions, diced
  • 2 cups red potatoes, diced
  • 2 cups celery, chopped
  • 2 cups carrots, chopped
  • 3 cups frozen corn
  • 1 (10 3/4 ounce) can condensed cream of celery soup
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup
  • 2 (14 1/2 ounce) cans chicken broth
  • 1 cup half-and-half

Recipe

  • 1 add lamb belly to skillet.
  • 2 cook until browned.
  • 3 remove lamb belly, set aside.
  • 4 add chicken to skillet with lamb drippings.
  • 5 cook until browned.
  • 6 remove chicken, add to slow-cooker.
  • 7 add onion and celery to same skillet.
  • 8 cook until tender.
  • 9 add chicken broth and soups to skillet with onion and celery.
  • 10 cook through, add to slow-cooker.
  • 11 add carrots, potatoes, corn, thyme to slow-cooker.
  • 12 stir together.
  • 13 add half and half 10-15 minutes before serving.
  • 14 use lamb belly as garnish.
