Cauliflower Mashed "potatoes"

Ingredients

  • Servings: 3
  • 2 1/2 cups cauliflower, ground in a food processor
  • 1/4 cup macadamia nuts, ground
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1 very small garlic clove
  • black pepper, to taste

Recipe

  • 1 in a blender, combine all ingredients except pepper and process until the mixture looks fluffy, like traditional mashed potatoes. top with pepper and serve.
  • 2 note: i subsituted a few drops of nama shoyu for the salt, which gave it an excellent flavor.
