Cauliflower-cheese Soup

Total Time: 1 hr 10 mins Preparation Time: 40 mins Cook Time: 30 mins

Ingredients

  • 1 large potato, peeled and diced
  • 1 large cauliflower, broken into florets
  • 1 medium carrot, peeled and cut
  • 3 medium garlic cloves
  • 1 1/2 cups onions, chopped
  • 1 1/2 teaspoons salt
  • 4 cups water
  • 2 cups grated cheese
  • 3/4 cup milk
  • 1/2 teaspoon caraway seed
  • black pepper

Recipe

  • 1 place potato, cauliflower except 2 cups for later, carrot, garlic, onion, salt, and water in sauce pan.
  • 2 bring to a boil and then simmer until everything is tender.
  • 3 put everything in a blender and put back into a saucepan.
  • 4 steam the rest of cauliflower until tender.
  • 5 add cauliflower to the pureed and top with cheese.
