Cheesy Broccoli-potato Mash

Ingredients

- 1 lb yukon gold potato, scrubbed and cut into wedges
- 3/4 lb broccoli floret, chopped (4 cups)
- 3/4 cup shredded fontina cheese
- 1/2 cup nonfat milk, heated
- 1/2 teaspoon salt
- fresh ground black pepper, to taste
Recipe
- 1 bring an inch of water to a boil in a large saucepan fitted with a steamer basket.
- 2 add potatoes, cover and steam for 10 minutes.
- 3 place broccoli on top, cover and steam until the potatoes and broccoli are tender, 6-8 minutes more.
- 4 transfer broccoli to a big bowl; coarsely mash using a potato masher.
- 5 add in the potatoes, cheese, milk, salt, and pepper; continue mashing to desired consistency.
- 6 taste and adjust seasoning, if needed.
- 7 serve immediately.
