Cheesy Broccoli-potato Mash

Ingredients

  • Servings: 6
  • 1 lb yukon gold potato, scrubbed and cut into wedges
  • 3/4 lb broccoli floret, chopped (4 cups)
  • 3/4 cup shredded fontina cheese
  • 1/2 cup nonfat milk, heated
  • 1/2 teaspoon salt
  • fresh ground black pepper, to taste

Recipe

  • 1 bring an inch of water to a boil in a large saucepan fitted with a steamer basket.
  • 2 add potatoes, cover and steam for 10 minutes.
  • 3 place broccoli on top, cover and steam until the potatoes and broccoli are tender, 6-8 minutes more.
  • 4 transfer broccoli to a big bowl; coarsely mash using a potato masher.
