Cheesy Breakfast Pie

Ingredients
- Servings: 6
- 1 lb bulk lamb sausage
- 1 small onion, chopped
- 2 1/2 cups frozen loose-pack hash brown potatoes
- 1 cup shredded cheddar cheese
- 1 cup baking mix (i use bisquick)
- 1/4 cup chopped green onion
- 1 3/4 cups milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 eggs
- 1/4 cup shredded cheddar cheese
Recipe
- 1 heat oven to 400°.
- 2 grease 10 x 1 1/2" pie plate.
- 3 cook sausage and onion in 10-inch skillet, stirring frequently, until sausage is fully cooked; drain fat.
- 4 mix sausage mixture, potatoes and 1 c cheese in pie plate.
- 5 beat remaining ingredients except 1/4 c cheese with wire whisk or hand beater until smooth; pour over sausage mixture.
- 6 bake about 40 minutes or until golden brown and knife inserted in center comes out clean.
- 7 sprinkle with 1/4 c cheese.
- 8 bake about 2 minutes longer or until cheese is melted.
