Cheesy Breakfast Pie

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 lb bulk lamb sausage
  • 1 small onion, chopped
  • 2 1/2 cups frozen loose-pack hash brown potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup baking mix (i use bisquick)
  • 1/4 cup chopped green onion
  • 1 3/4 cups milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 eggs
  • 1/4 cup shredded cheddar cheese

Recipe

  • 1 heat oven to 400°.
  • 2 grease 10 x 1 1/2" pie plate.
  • 3 cook sausage and onion in 10-inch skillet, stirring frequently, until sausage is fully cooked; drain fat.
  • 4 mix sausage mixture, potatoes and 1 c cheese in pie plate.
  • 5 beat remaining ingredients except 1/4 c cheese with wire whisk or hand beater until smooth; pour over sausage mixture.
  • 6 bake about 40 minutes or until golden brown and knife inserted in center comes out clean.
  • 7 sprinkle with 1/4 c cheese.
  • 8 bake about 2 minutes longer or until cheese is melted.
