Cheesy Chicken Bake With New Potatoes

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 8 chicken thighs, skin on
  • 3 ounces soft spreadable cheese with garlic and herbs
  • 1 lb new potato, halved
  • 4 medium tomatoes, halved
  • 1 garlic clove, crushed
  • 1 pinch superfine sugar
  • 6 sprigs thyme, leaves stripped from 4 of them
  • olive oil
  • salt and pepper

Recipe

  • 1 heat the oven to 400°f.
  • 2 carefully lift the skin on the chicken thighs and spread the soft cheese between the skin and flesh.
  • 3 sit the chicken in a roasting tin, skin side up and surround with the potatoes and halved tomatoes, cut side up.
  • 4 scatter the tomatoes with the garlic and a tiny bit of sugar. scatter the thyme leaves and whole sprigs over the tin, season and drizzle with oil.
  • 5 roast for 45 mins until the chicken and potatoes are cooked through with crisp golden skin.
