Chole Bowle Chicken Noodle Soup

Ingredients

  • Servings: 6
  • 3 cups yukon gold potatoes, chopped
  • 1/2 cup yellow onion, diced
  • 1 cup carrot, chopped
  • 1 cup celery, chopped
  • 4 slices raw bacon, chopped
  • 1/4 cup butter
  • 3 garlic cloves, minced
  • 1/4 cup dry wine, chardonnay
  • 3 cups baked chicken breasts, cut to bite size preference
  • 8 cups chicken broth
  • 2 teaspoons poultry seasoning
  • 1 teaspoon thyme
  • 2 bay leaves
  • 1 parmesan rind
  • 1/2 cup heavy whipping cream
  • 16 ounces egg noodles, frozen
  • 1 teaspoon garlic salt
  • salt
  • pepper

Recipe

  • 1 heat pan over medium high heat. melt butter, then add bacon & cook for 1 minute. saute onion, potato, carrots, celery, and garlic for 5 minutes.
  • 2 add wine. stir to mix then add chicken. then add remaining ingredients.
  • 3 bring to boil for 5 minutes.
  • 4 reduce to simmer and cook for 30-45 minutes.
  • 5 remove bay leave & rind, then serve.
