Cream Of Zucchini, Spinach & Broccoli

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large zucchini
  • 1 bunch broccoli
  • 10 ounces frozen spinach
  • 1 medium potato
  • 1 tablespoon fresh parsley
  • 4 -5 cups vegetable stock
  • 1/4 cup heavy whipping cream

Recipe

  • 1 chop vegetables.
  • 2 saute zucchini until transparent.
  • 3 add potato, spinach, broccoli, parsley and vegetable stock.
  • 4 bring to boil, reduce heat, cover and simmer 20 minutes.
  • 5 allow to mildly cool, blend in small quantities in blender then return to pot.
  • 6 reheat gently and stir in cream.
