Creamy Herb Mashed Potatoes

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 5 lbs potatoes, peeled and cubed
  • 3 garlic cloves, peeled
  • 4 ounces cream cheese, softened
  • 1/2 cup half-and-half
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup snipped chives
  • 1 tablespoon fresh dill or 1/2 teaspoon dried dill
  • 1/8 teaspoon paprika (optional)

Recipe

  • 1 place potatoes and garlic in a large pot and civer with water.
  • 2 bring to a boil.
  • 3 reduce heat; cover and simmer for 20-25 minutes until potatoes are very tender.
  • 4 drain well.
  • 5 return potatoes to pot and add the cream cheese, half n' half, butter, salt, pepper and dill.
  • 6 mash and whip until smooth and creamy.
  • 7 stirr in snipped chives.
  • 8 transfer to a serving bowl and sprinkle with paprika.
