Creamy Herb Mashed Potatoes

Ingredients

- 5 lbs potatoes, peeled and cubed
- 3 garlic cloves, peeled
- 4 ounces cream cheese, softened
- 1/2 cup half-and-half
- 3 tablespoons butter
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup snipped chives
- 1 tablespoon fresh dill or 1/2 teaspoon dried dill
- 1/8 teaspoon paprika (optional)
Recipe
- 1 place potatoes and garlic in a large pot and civer with water.
- 2 bring to a boil.
- 3 reduce heat; cover and simmer for 20-25 minutes until potatoes are very tender.
- 4 drain well.
- 5 return potatoes to pot and add the cream cheese, half n' half, butter, salt, pepper and dill.
- 6 mash and whip until smooth and creamy.
- 7 stirr in snipped chives.
- 8 transfer to a serving bowl and sprinkle with paprika.
