- 1 1/2 lbs yukon gold potatoes, recommend klondike gold potatoes
- 1/3 cup heavy cream
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3 ounces brie cheese, rind removed, cubed
- 1 teaspoon fresh thyme leave, chopped
Recipe
- 1 boil potatoes until tender about 25 to 30 minutes.
- 2 drain and mash potatoes. add cream, butter, salt, pepper, cubed brie and thyme. blend until smooth.
