Brighton Clam Chowder

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 1 (125 ml) can chopped clams with clam juice
  • 4 anchovies
  • 100 g diced bacon
  • 1 parsnip, diced
  • 3 potatoes, diced
  • 1 small leek, finely sliced
  • 1/2 onion, chopped
  • 1 sprig thyme
  • 300 ml chicken stock
  • 50 ml sour cream
  • 1 tablespoon parsley, chopped finely

Recipe

  • 1 first sweat the bacon, onion and anchovies until the onions have turned translucent.
  • 2 then add the potatos, leek, parsnip, clams and clam juice. also add the stock and the sprig of thyme and simmer until the potatos start falling apart. (about 25 minutes).
  • 3 season with some fresh ground pepper. no need for salt, as the bacon and anchovies will provide enough saltyness.
  • 4 sprinkle the parsley on top and garnish with a swirl of sour cream.
  • 5 delicious!
