Cheddar And Corn Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 tablespoons butter
  • 1 large onion, chopped
  • 1 lb potato, cut in 1/2 inch dice
  • 4 cups corn
  • 14 ounces chicken broth
  • 2 1/2 teaspoons dried thyme
  • 3 cups half-and-half
  • 4 cups grated cheddar cheese
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large saucepan, heat butter. sauté onions, 4 minutes.
  • 2 add potatoes, corn, chicken broth, thyme and 2 cups water. bring to a boil and cook until potatoes are just tender, 8 minutes.
