Baatis

Total Time: 1 hr 20 mins Preparation Time: 30 mins Cook Time: 50 mins

Ingredients

  • 500 g wheat flour
  • 300 g ghee
  • 1 teaspoon salt
  • 250 g potatoes, boiled
  • 1/2 teaspoon roasted jeera powder
  • 1 teaspoon green chili
  • 1 teaspoon ginger paste
  • 1/2 teaspoon kala namak
  • 1 inch dalchini
  • 1/2 teaspoon salt
  • 1 inch javitri
  • 1/2 teaspoon garam masala
  • 1 big cardamom
  • 1/2 teaspoon dhaniya powder
  • 1 inch tejpatta
  • 1/2 teaspoon red chili pepper
  • 1/2 teaspoon jeera powder
  • coriander, finely chopped (for flavour)
  • 2 tablespoons oil
  • 10 -15 kaju
  • 10 -15 kishmish

Recipe

  • 1 ----------method for making stuffing-------------.
  • 2 peel the potatoes and mash them.
  • 3 heat oil in a kadahi.
  • 4 add dalchini, javitri, cardamom (big), kaju and kishmish, tejpatta, jeera, green chilly and ginger paste.
  • 5 now add the potatoes.
  • 6 add roasted jeera, kala namak, salt, garam masala, dhaniya, red chilly powder and chopped coriander.
  • 7 fry for 4-5 minutes.
  • 8 keep aside till it cools down.
  • 9 -------------method for making dough---------------.
  • 10 melt 200 gms of the ghee.
  • 11 add ghee and salt to the wheat flour.
  • 12 make a stiff dough by using water.
  • 13 now make 15-16 balls of equal size.
  • 14 stuff the stuffing in the balls.
  • 15 grill it in gas tandoor.
  • 16 heat the rest of the ghee, dip the baatis and serve with dal and potato bharta.
