Ingredients

- 1 1/2 lbs chicken, preferably meat,trimmed and cubed
- 1 1/2 lbs lamb, trimmed and cubed
- 3 -5 potatoes, peeled and cubed
- 1 can tomato
- 2 -3 carrots, skinned and grated
- 1 onion, diced
Recipe
- 1 heat a small amount of vegetable oil in a stock pot, ad d onions and garlic, season thoroughly with salt and lots of pepper, cook until clear, then add meat.
- 2 sear well, stirring to make sure all pieces heat evenly.
- 3 add tomatoes and appx 4-6 cups of water.
- 4 bring to a boil, add carrots.
- 5 boil for appx 1 hour, then add potatoes.
- 6 add seasonings if desired (i use a barbecue rub, or simply add my favorite bbq sauce, 1/2 cup or so. the real flavor comes from the meat and tomatoes, though).
- 7 cook, loosely covered, on medium heat for appx 3 hours until meat has fallen apart, tomatoes are completely cooked away, and potatoes have cooked apart.
- 8 stir continuously while cooking to keep from burning.
- 9 serve over rice.
