Blue Cheese Twice Baked Potatoes

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 4 medium baking potatoes
  • 1/2 cup sour cream
  • 1 ounce blue cheese, crumbled
  • 1/4 cup milk
  • 4 tablespoons margarine
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons shortening

Recipe

  • 1 rub potatoes with shortening.
  • 2 bake at 400 for 1 hour til soft.
  • 3 cook bacon til crisp and crumble.
  • 4 cut potatoes in 1/2 lenthwise
  • 5 scoop out inside of each.
  • 6 mash the potatoes.
  • 7 add sour cream, blue cheese, milk, margarine, salt and pepper.
  • 8 beat with mixer until fluffy.
  • 9 spoon potato mixture lightly into shells.
  • 10 sprinkle with bacon.
  • 11 place on baking sheet and return to oven.
  • 12 bake 15 minutes or until heated through.
