Broccoli Soup With Creme Fraiche

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 liter chicken stock
  • 250 g broccoli
  • 200 g carrots
  • 100 g potatoes
  • 1 medium onion
  • 1/2 teaspoon cumin
  • 1 1/2 teaspoons coriander
  • 1/4 teaspoon salt
  • 1/4 cup creme fraiche

Recipe

  • 1 put first eight ingredients in pot and bring to the boil.
  • 2 turn down the heat and simmer for as long as it takes for the vegetables to soften then allow to cool.
  • 3 blend till smooth.
  • 4 reheat and serve with the creme fraiche.
