Brunch Casserole

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 lb bulk breakfast sausage
  • 3 cups shredded potatoes, drained and pressed
  • 1/4 cup butter, melted
  • 12 ounces mild cheddar cheese, shredded
  • 1/2 cup onion, shredded
  • 1/2 cup green pepper, chopped
  • 1 lb small curd cottage cheese
  • 6 large eggs

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 place sausage in a large, deep skillet.
  • 3 cook over medium-high heat until evenly brown.
  • 4 drain, crumble and set aside.
  • 5 stir together shredded potatoes and butter.
  • 6 line bottom and sides of a medium glass baking dish with potato mixture.
  • 7 combine sausage, cheddar cheese, onion, pepper, cottage cheese and eggs; pour mixture into baking dish.
  • 8 bake for 60 minutes, until a toothpick inserted into center of the casserole comes out clean.
  • 9 let cool for 5 minutes before serving.
