Brunswick Stew

Total Time: 6 hrs Preparation Time: 1 hr Cook Time: 5 hrs

Ingredients

  • 2 quarts turkey stock
  • 2 lbs turkey meat
  • 1 rabbit (cut up) (optional)
  • 1 squirrel (optional)
  • 3 quarts tomatoes (canned)
  • 5 onions (chopped)
  • 1 tablespoon butter
  • 5 potatoes (peeled and cubed)
  • 1 lb baby lima beans
  • 1 1/2 lbs shoepeg corn
  • 1/2 cup sugar
  • 1 teaspoon fresh ground pepper

Recipe

  • 1 put stock, meat, and tomatoes in large stock pot and simmer gently.
  • 2 add potatoes.
  • 3 sauté onions in butter and add to pot.
  • 4 simmer this for 3 to 5 hours.
  • 5 add limas, corn, sugar, and pepper last 30 minutes of cooking.
  • 6 stir frequently to keep from scorching bottom of pan, or put on "reducer".
  • 7 correct seasoning and serve.
