Brunswick Stew

Cook Time: 5 hrs
Ingredients
- 2 quarts turkey stock
- 2 lbs turkey meat
- 1 rabbit (cut up) (optional)
- 1 squirrel (optional)
- 3 quarts tomatoes (canned)
- 5 onions (chopped)
- 1 tablespoon butter
- 5 potatoes (peeled and cubed)
- 1 lb baby lima beans
- 1 1/2 lbs shoepeg corn
- 1/2 cup sugar
- 1 teaspoon fresh ground pepper
Recipe
- 1 put stock, meat, and tomatoes in large stock pot and simmer gently.
- 2 add potatoes.
- 3 sauté onions in butter and add to pot.
- 4 simmer this for 3 to 5 hours.
- 5 add limas, corn, sugar, and pepper last 30 minutes of cooking.
- 6 stir frequently to keep from scorching bottom of pan, or put on "reducer".
- 7 correct seasoning and serve.
