Campfire (or Oven) Pepper Jack And Bacon Potatoes

Ingredients
- Servings: 4
- 3 russet potatoes, scrubbed and cubed
- 1 medium yellow onion, diced
- 3 -4 garlic cloves, coarsley minced
- 1/2 cup bacon, pieces not bits (i use pre-packaged)
- 6 slices monterey jack pepper cheese
- 4 tablespoons butter
Recipe
- 1 in a foil pan, add half of the butter.
- 2 add potatoes, onions, garlic, bacon, and remaining butter to foil pan.
- 3 cover with aluminum foil and put on campfire.
- 4 let potatoes cook for 30 minutes, stirring occasionally.
- 5 top with cheese and cook additional 15 minutes, or until potatoes are soft throughout.
