Campfire (or Oven) Pepper Jack And Bacon Potatoes

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 3 russet potatoes, scrubbed and cubed
  • 1 medium yellow onion, diced
  • 3 -4 garlic cloves, coarsley minced
  • 1/2 cup bacon, pieces not bits (i use pre-packaged)
  • 6 slices monterey jack pepper cheese
  • 4 tablespoons butter

Recipe

  • 1 in a foil pan, add half of the butter.
  • 2 add potatoes, onions, garlic, bacon, and remaining butter to foil pan.
  • 3 cover with aluminum foil and put on campfire.
  • 4 let potatoes cook for 30 minutes, stirring occasionally.
  • 5 top with cheese and cook additional 15 minutes, or until potatoes are soft throughout.
