Cheap Beef In Potato Nests

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 medium potatoes, cut into 1 inch cubes
  • 2/3 cup milk (or less)
  • salt and pepper
  • 2 teaspoons vegetable oil
  • 1 small sweet pepper, finely chopped (optional)
  • 1 medium onion
  • 1 lb lean ground beef
  • 1 can tomato soup or 3/4 cup barbecue sauce
  • salt and pepper
  • 1/4 cup thinly sliced green onion (optional)
  • 1/2 cup cheddar cheese (optional)
  • salt and pepper

Recipe

  • 1 place potatoes in a med.
  • 2 sauce pan with just enough water to cover.
  • 3 simmer until tender.
  • 4 heat oil in fry pan.
  • 5 saute onion and pepper in oil.
  • 6 add ground beef and brown well.
  • 7 add tomato soup (or bbq sauce) to meat mixture.
  • 8 heat through.
  • 9 drain, mash potatoes.
  • 10 add enough milk to moisten and mash again.
  • 11 season to taste.
  • 12 divide potatoes equally onto four serving plates.
  • 13 make an indentation in the middle of each mound; fill with beef mixture.
  • 14 top with green chopped green onion and a sprinkle of cheddar cheese.
