Cheap Beef In Potato Nests

Ingredients

- 4 medium potatoes, cut into 1 inch cubes
- 2/3 cup milk (or less)
- salt and pepper
- 2 teaspoons vegetable oil
- 1 small sweet pepper, finely chopped (optional)
- 1 medium onion
- 1 lb lean ground beef
- 1 can tomato soup or 3/4 cup barbecue sauce
- salt and pepper
- 1/4 cup thinly sliced green onion (optional)
- 1/2 cup cheddar cheese (optional)
- salt and pepper
Recipe
- 1 place potatoes in a med.
- 2 sauce pan with just enough water to cover.
- 3 simmer until tender.
- 4 heat oil in fry pan.
- 5 saute onion and pepper in oil.
- 6 add ground beef and brown well.
- 7 add tomato soup (or bbq sauce) to meat mixture.
- 8 heat through.
- 9 drain, mash potatoes.
- 10 add enough milk to moisten and mash again.
- 11 season to taste.
- 12 divide potatoes equally onto four serving plates.
- 13 make an indentation in the middle of each mound; fill with beef mixture.
- 14 top with green chopped green onion and a sprinkle of cheddar cheese.
