Ingredients

- 1 (20 ounce) bag simply potatoes diced potatoes with onion
- 1 lb shredded cooked chicken
- 1 (15 ounce) can green enchilada sauce
- 1 (4 ounce) can diced green chilies
- 1 (8 ounce) bag crystal farms shredded monterey jack cheese
Recipe
- 1 preheat oven 400°f.
- 2 while chicken is cooking combine green chili enchilada sauce and diced green chilis in a bowl.
- 3 stir in potatoes until coated.
- 4 stir in 1 cup of shredded cheese reserve 1 cup for later.
- 5 stir in cooled shredded chicken.
- 6 pour into lightly greased 9x13 pan.
- 7 sprinkle remaining cheese on top.
- 8 bake at 400f for 45 to 50 minutes.
