Au Gratin Peas And Potatoes

Ingredients

  • Servings: 4
  • 6 bacon, strips divided
  • 1 onion, chopped
  • 4 cups sliced peeled cooked potatoes
  • salt and pepper
  • 1 (10 ounce) package frozen peas, cooked and drained
  • 2 cups shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup milk

Recipe

  • 1 in a large skillet, fry bacon until crisp.
  • 2 remove bacon to drain on a paper towel lined plate.
  • 3 drain skillet, reserving 1 tablespoon bacon drippings.
  • 4 saute onion in the bacon drippings, until tender.
  • 5 layer with potatoes, salt and pepper to taste, peas, 1 cup of cheese, and crumbled bacon.
  • 6 reduce heat; cover and simmer for 10 minutes or until heated through.
  • 7 mix together the mayonnaise and milk until smooth texture.
  • 8 pour mixture over bacon.
  • 9 sprinkle with remaining cheese.
  • 10 remove from the heat and let stand for 5 minutes before serving.
