Ingredients

- 6 bacon, strips divided
- 1 onion, chopped
- 4 cups sliced peeled cooked potatoes
- salt and pepper
- 1 (10 ounce) package frozen peas, cooked and drained
- 2 cups shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/2 cup milk
Recipe
- 1 in a large skillet, fry bacon until crisp.
- 2 remove bacon to drain on a paper towel lined plate.
- 3 drain skillet, reserving 1 tablespoon bacon drippings.
- 4 saute onion in the bacon drippings, until tender.
- 5 layer with potatoes, salt and pepper to taste, peas, 1 cup of cheese, and crumbled bacon.
- 6 reduce heat; cover and simmer for 10 minutes or until heated through.
- 7 mix together the mayonnaise and milk until smooth texture.
- 8 pour mixture over bacon.
- 9 sprinkle with remaining cheese.
- 10 remove from the heat and let stand for 5 minutes before serving.
