Camper's Skillet Breakfast

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 4 slices bacon, cut-up
  • 1 medium potato, cooked
  • 1/4 cup butter, not margarine
  • 5 fresh mushrooms, sliced
  • 3 tablespoons chopped onions
  • 1 slice bread, crust tore-up (optional)
  • 3 eggs, slightly beaten

Recipe

  • 1 be sure to stir occasionally during &/or between each step.
  • 2 thinly slice or shred potato & set aside.
  • 3 place cut-up bacon in a heavy skillet, along with half the butter & cook over medium-high heat until bacon starts to get limp.
  • 4 add onion & potaoes & season to taste. (i use lawry's seasoned salt & lawry's seasoned pepper)
  • 5 cook until the potaoes just start to brown.
  • 6 add sliced mushrooms & tore-up bread crust (i use the end pieces).
  • 7 when all is at desired doneness, add remaing butter & the eggs.
  • 8 cook until eggs are cooked through.
  • 9 serve imediately -- enjoy!
