Cheesy Smashed Potatoes & Cauliflower

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 lb red potatoes, scrubbed but not peeled, cut into chunks
  • 1 cup cauliflower floret, cut into bite sized
  • 1/4 cup light sour cream
  • 1 cup reduced-fat sharp cheddar cheese, shredded

Recipe

  • 1 place potatoes and cauliflower in large saucepan with enough water to cover.
  • 2 bring to a boil over high heat.
  • 3 simmer 20 minutes, or until vegetables are tender.
  • 4 drain and return to pan.
  • 5 add sour cream and mash until light and fluffy.
  • 6 stir in cheese.
  • 7 serve.
