Chipotle Smashed Potatoes

Ingredients
- Servings: 4
- 2 lbs yukon gold potatoes or 2 lbs small red potatoes, skin on and cut in 1/2
- 1 teaspoon extra virgin olive oil
- 4 slices hickory smoked bacon, chopped
- 1 medium onion
- 1 tablespoon ground chipolte chili powder
- 1 cup sour cream
- 1 pinch salt
Recipe
- 1 boil potatoes until tender in large pot of water with a lid (put the potatoes in cold water to start the boiling process to ensure even cooking).
- 2 in a skillet add the evoo, bacon, onion and chipolte chili powder. allow to cook on medium until bacon is done and onions are tender.
- 3 strain potatoes and put back in pot on stove.
- 4 add sour cream and a pinch of salt. smash with hand smasher.
- 5 mix in bacon/onion mixture.
- 6 taste to add salt if needed.
