Chipotle Smashed Potatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 lbs yukon gold potatoes or 2 lbs small red potatoes, skin on and cut in 1/2
  • 1 teaspoon extra virgin olive oil
  • 4 slices hickory smoked bacon, chopped
  • 1 medium onion
  • 1 tablespoon ground chipolte chili powder
  • 1 cup sour cream
  • 1 pinch salt

Recipe

  • 1 boil potatoes until tender in large pot of water with a lid (put the potatoes in cold water to start the boiling process to ensure even cooking).
  • 2 in a skillet add the evoo, bacon, onion and chipolte chili powder. allow to cook on medium until bacon is done and onions are tender.
  • 3 strain potatoes and put back in pot on stove.
  • 4 add sour cream and a pinch of salt. smash with hand smasher.
  • 5 mix in bacon/onion mixture.
  • 6 taste to add salt if needed.
