Coach Quinn's Potato Salad

Ingredients

  • Servings: 4
  • 8 medium potatoes
  • 3 eggs
  • miracle whip
  • milk
  • butter
  • salt
  • fresh ground pepper
  • paprika

Recipe

  • 1 peel and boil the potatoes. hard boil the eggs. when the eggs are done, put in cold water to cool. this will make the shells easier to come off.
  • 2 when the potatoes are soft, add a little bit of milk and dollops of butter. add milk to make the potatoes the consistency you like. don't be afraid to use your hands to mix and test the consistency. let the potato mix cool. cut up the eggs, adding a bit of butter as well as salt and pepper.
  • 3 once potatoes are cool, add mashed eggs, leaving some of the cut up eggs side to put on top of the salad.
  • 4 add miracle whip to taste. when you think you have enough, add at least 2 more heapng spoonfuls.
  • 5 mix well, add salt and pepper and freshly ground pepper. when salad is mixed put a skim of miracle whip across the top, add cut up chunks of the remaining egg and garrnish with paprika.
  • 6 cool in refrigerator before serving.
