Creamy Spinach Potato Mash

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup baby spinach, chopped
  • 6 baking potatoes, peeled and cubed
  • 2 garlic cloves, peeled
  • 2 sprigs rosemary, fresh
  • 3/4 cup chicken broth, heated
  • 2 tablespoons butter
  • 1/2 cup roasted red pepper, diced

Recipe

  • 1 place spinach in colander.
  • 2 in pot, bring next 3 ingredients and enough salted water to cover, to a boil.
  • 3 cook 20 minutes; pour over spinach to drain. discard rosemary.
  • 4 return potatoes and spinach to pot and stir in butter and broth.
  • 5 using hand masher, mash mixture until smooth.
