Creamy Spinach Potato Mash

Ingredients
- 1 cup baby spinach, chopped
- 6 baking potatoes, peeled and cubed
- 2 garlic cloves, peeled
- 2 sprigs rosemary, fresh
- 3/4 cup chicken broth, heated
- 2 tablespoons butter
- 1/2 cup roasted red pepper, diced
Recipe
- 1 place spinach in colander.
- 2 in pot, bring next 3 ingredients and enough salted water to cover, to a boil.
- 3 cook 20 minutes; pour over spinach to drain. discard rosemary.
- 4 return potatoes and spinach to pot and stir in butter and broth.
- 5 using hand masher, mash mixture until smooth.
- 6 stir in peppers and serve.
