Cheesy Smashed Potatoes

Ingredients

  • Servings: 6
  • 1 lb red potatoes, cut into chunks
  • 1 cup cauliflower floret
  • 1/4 cup sour cream
  • 1 cup cheddar cheese, light, shredded

Recipe

  • 1 place potatoes and cauliflower in large saucepan. add enough water to cover.
  • 2 bring to a boil on high heat. reduce heat to medium and simmer 20 minutes or until vegetables are tender. drain. return to pan.
  • 3 add sour cream, mash until vegetable mixture is light and fluffy.
  • 4 stir in cheese.
