Clam Chowder

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3/4 lb chopped clam
  • 1 medium onion, chopped
  • 3/4 cup chopped celery
  • 3 -4 slices thick bacon, chopped
  • 1/4 cup butter
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1 bay leaf
  • 1/4 cup flour
  • 2 potatoes, diced
  • 1/2 cup water
  • 1/2 cup wine
  • 1 (8 ounce) bottle clam juice
  • 1/2 cup whipping cream
  • 1 cup milk (approx.)

Recipe

  • 1 in skillet, over med heat, cook onion, celery, and bacon in butter and oil. add salt, pepper, thyme, paprika, and bay leaf.
  • 2 cook until vegetables are crisp tender.
  • 3 stir in flour until mixed. cook 5 minute (don't burn).
  • 4 in sauce pan,cook potatos in water, wine, clam juice and liquid for 15 minute add clams, onion mix, and cream. cook until thickened.
  • 5 add milk to desired consistancy.
