Broccoli Mashed Potatoes

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 4 cups mashed potatoes, room temperature
  • 2 tablespoons butter
  • 3 cups broccoli florets, thawed, chopped
  • 1/4 cup chopped onion (vidalia is wonderful)
  • 1 garlic clove, minced
  • 1/4 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 1/4 teaspoon ground black pepper
  • 8 ounces shredded cheddar cheese

Recipe

  • 1 preheat broiler.
  • 2 melt butter in a large dutch oven.
  • 3 add broccoli, onion and garlic; saute until tender.
  • 4 place in blender container with chicken broth.
  • 5 process until mixture is pureed.
  • 6 add to mashed potatoes.
  • 7 stir in parmesan cheese and pepper.
  • 8 transfer to buttered ovensafe serving dish.
  • 9 top with shredded cheese.
  • 10 broil until hot and bubbly and cheese melts and browns.
  • 11 serve immediately.
