Chicken Adobo

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 tablespoons vegetable oil
  • 5 garlic cloves, peeled and crushed
  • 1 medium onion, slice
  • 1 1/2 cups soy sauce
  • 2 cups vinegar
  • 1/4 cup sugar
  • 6 boneless skinless chicken breasts or 6 bone-in chicken breasts
  • 4 large potatoes, washed and sliced into wedges
  • 2 tablespoons cornstarch or 4 tablespoons flour
  • black pepper
  • 1/2 teaspoon whole black peppercorn
  • 4 bay leaves

Recipe

  • 1 drizzle oil onto pan and turn heat to medium.
  • 2 saute garlic and onions until onions become transparent.
  • 3 cook chicken in oil until both sides are slightly browned.
  • 4 turn heat down, add soy/vinegar mixture, cover and simmer. uncover and mix after 6-8 minutes.
  • 5 add potatoes, black pepper, stir.
  • 6 turn heat off when potatoes have softened.
  • 7 dissolve/mix in corn starch, sugar and black pepper.
  • 8 add bay leaves.
  • 9 * eat over cooked rice.
